Pineapple Jam Pork Loin

     I had stopped at this little local farmers market on one of my days of traveling for work. They had a couple different types of homemade jams and this one caught my eye. A pineapple jam. I had never heard of taking pineapple and making it into jam before, so I had to buy it. Well it was one of the greatest things I had tried. It is great on toast, peanut butter and jelly sandwich, and on a fresh made biscuit. I had so much I didn't know what to do with. So I decided why not take it and coat it on a pork loin and cook it. This dish is so simple and only requires a few minutes and 3-4 ingredients. Pineapple Jam Pork Loin.

 

Ingredients:

  • 1 pork tenderloin
  • Pineapple jam
  • 1/4 cup soy
  • Salt/ pepper

1. Salt and pepper the pork loin on all sides. Lay on a hot grill till you get those grill marks on all sides.

2. Remove and rub the pineapple jam all over.

3. Place in a crockpot and pour in the soy sauce. Turn on low and cook for 5-6 hours.

Quick, simple, and very few ingredients but so good that everyone in your family will love it.

Prep Time: 10 minutes
Cook Time: 5-6 hours
Serves: 4+

Thai Prew Wan Burger

     I am slightly obsessed with Thai food. I mean I will go out of my way to just have some of my favorite dishes in a Thai restaurant. I have been known to travel an hour or so just to sit and have a simple Thai dinner. My obsession can almost border on the line of creepy, (Just kidding), but I do love the combinations that Thai cuisine offer. Spicy alongside sweet. Fragrant and herbal alongside savory and smoky. I love them all. This dish came to mind when I had just had some Thai food in the city and was still craving another hit of it. The weather was starting to break and I also wanted to grill a juicy hamburger.........BAMM! It hit me. Why not combine the two into one delicious lip smacking dinner. Thai meets American. Here we go. My Thai Prew Wan Burger, (or Thai sweet and sour meets American backyard classic).
 
Ingredients:
 
  • 1 lb burger.
  • Brioche buns
  • 1 cucumber
  • 1 tomato
  • 1 8 oz can crushed pineapple
  • 1 small bundle green onion
  • 1 1/2 tbs soy
  • 1 1/2 tbs oyster sauce
  • 1 tbs sugar
  • 1/4 cup  ketchup
  • 1 tbs Thai chili sauce
  • Salt/pepper
 
1. Salt and pepper the ground beef and separate into 4 equal parts. Roll up and press between wax paper with a plate to make about 6 inch in diameter burger patties. Sit aside.
 
2. Meanwhile dice up the cucumber and tomato into chunks. Combine in a bowl with the crushed
pineapple. Dice up the green onion and combine.
 
3. In a wok over medium high heat saute the cucumber, tomato, pineapple, and onion in a little oil until tender.
 
4. Combine the soy, oyster sauce, sugar, ketchup, and chili sauce into a bowl. Mix well and pour into wok.
 
5. Stir together until combined and remove from wok. Sit aside.
 
6. Now grill the burgers to your taste.
 
7. Serve mixture on top of burger patty. Top with Brioche buns.
 
     This burger was sooooooooo damn good. I saved a few for my friends and they loved it. Give it a try.

     What single guy doesn't love a great pork chop? I alone have many different recipes for pork chops.  I have already posted a few on here.  Pork chops are so versatile and go with about just anything.  As a single guy you have to figure out a quick and easy way to make most of what is in your freezer and fridge.  Yes I love to cook, and yes I love to come up with elaborate meals and recipes; however there are times that I just want to come home throw a steak or pork chop on the grill and eat a great and delicious meal that takes under 30 minutes. 

     This dish is inspired by the true old American meal of pork chops and applesauce.  Who doesn't remember the episode of the Brady Bunch where Peter impersonates Bogart and continues to repeat that he is having "Pork chops and applesauce" for dinner. This dish is just that with a twist that any single guy can just throw together and make it look as if he took cooking lessons.  3 ingredients are all this dish requires; Pork chop, apple butter or sauce, crushed pineapple.  That's it, so easy you won't believe once you taste it that it only required three simple ingredients and took less than 30 minutes.  Please enjoy my Bachelor's Pork Chops And Applesauce.

Ingredients:
  • 2 large bone in or boneless pork chops
  • 4 oz apple sauce or apple butter
  • 4 oz crushed pineapple
  • Butter
  • Salt/pepper

     First simply salt and pepper your pork chops.  In a sauté pan over medium high heat melt some butter and fry your pork chops on both sides until browned.  Cover with a lid and let simmer for about 10-15 minutes until chops are cooked through.  In a small sauce pan combine the apple butter and crushed pineapple and simmer on low.  Serve over your chops and enjoy!  This dish is so easy but oh so delicious that any single guy on the go can make this in a flash.  Give it a shot for even a first date.  I am sure you will impress that special someone.

Grilled Pork Chops With A Pineapple/Mango Chutney

Grilled Pork Chops with Pineapple Mango Chutney

 

     So I obtained these awesome large bone in pork chops the other day.  I haven't seen a pork chop this big ever.  I thought to myself, "What would go good with these hunks of deliciousness?"  So I thought, why not create a fusion of sorts of Asian/Hawaiian tastes into succulent chutney over the grilled pork. 

     Pork happens to be one of my favorites of the meat families.  Whether it is pork loin, chops, and of course bacon and sausage, pork is a great protein option with a lot of flavor. I always prepare them the same way.  Usually a little rosemary or garlic and typically broiled or grilled.  This time I thought I should change it up a bit and add some sort of fresh fruit salsa or chutney.  I've had pork with apples, pears, oranges, etc., but what about adding some flare to the whole idea of a fruit companion.  So here goes.  I took some of the flavors of Asian and Hawaiian and combined them into this delicious chutney compote kind of additive.  Hope you enjoy my Grilled Pork chops with a Pineapple and Mango Chutney.

Ingredients:

  • 2 lg bone in Pork Chops
  • 1/3 cup of soy sauce
  • 1/4 cup brown sugar
  • 1 tbs diced fresh ginger
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced green onion
  • Black pepper

     In a small sauté pan pour in the soy sauce and bring to a slow simmer.  Add in the fresh ginger, brown sugar, pineapple, mango and grilled onion.  Stir together to dissolve the sugar then cover and slowly simmer for about 15 minutes.  Meanwhile sprinkle some fresh black pepper on both sides of the pork chops.  Now on a hot grill over high heat place both chops and leave sit for roughly 5 minutes.  Then turn and grill on other side for another 5 minutes.  You can then switch sides again to get those crisscross grill marks if you like.  Remove from stove and let sit for 5 minutes.  Sever these perfectly cooked pork chops with the pineapple mango chutney drizzled on top. Goes good with a side of rice or your favorite vegetable. Serves 2. Ready in 30-45 minutes depending on the temperature of pork.
