Coffee Rubbed Steak


     If looking for an interesting twist to your typical steak dinner, why not give this Coffee Rubbed Steak a try. It is packed full of interesting flavor accompanied by a delicious sauce to drizzle over for serving.

Ingredients:

  •  Flank Steak
  • 2 tsp brown sugar
  • 2 tsp chili powder
  • 1 tsp oregano
  • 1 tbs ground coffee
  • Salt/pepper


Sauce:

  • 1 cup brewed coffee
  • 1/3 cup brown sugar
  • 1/4 cup honey whiskey
  • 1 tbs Worcestershire
  • 1 tsp black pepper


1. Rub steak with salt, pepper, brown sugar, chili powder, oregano and ground coffee.

2. Grill to preferred taste.

3. Meanwhile, in a small sauce pot, combine brewed coffee, brown sugar, whiskey, Worcestershire sauce, and black pepper. Bring to a boil, lower heat and simmer for roughly 15 minutes until reduced.

4. Serve steak sliced with sauce drizzled over top.

Prep Time: 5 minutes
Cook Time: 15 minutes
Serves: 1-2.

     This steak was an amazing dinner for myself as well as a friend. Serve this for a delicious first date meal and wow your companion.

Steak Imperial

    So one of my favorite steak dishes is the steak imperial. I used to eat it quite a bit at the local restaurant down on the river called Calain's Cove. The owner was this great lady that even when it wasn't on the menu, or a special for the evening would cook it up just for me. She used filet, however I decided to use a simple yet delicious flank cut of beef. This was my first attempt at making Hollandaise sauce and I must say it turned out very well. Steak Imperial.

Ingredients:

  • 1 flank steak
  • salt/pepper


  • 1 small 8 oz can of lump crab meat
  • Tbs Garlic powder
  • Tbs hot mustard
  • Tbs old bay seasoning
  • 2 tbs Italian style bread crumbs


  • 4 egg yolks
  • 1/2 squeezed lemon
  • 1 stick melted butter
  • Pinch cayenne


1. Salt and pepper steak and set aside to grill.
2. In a large bowl combine crab meat, garlic powder, mustard, Old bay, bread crumbs. Sit aside.
3. In a stainless steal bowl whisk the egg yolks and lemon juice until doubled in size.
4. Over a double boiler with simmering water whisk the egg yolk mixture and slowly drizzle in the melted butter until doubled in size. 
5. Remove and whisk in the cayenne. Sit aside and keep warm until serving.
6. Now grill the steak to your choice of temp. 
7. Slice, top with some of the crab mixture and drizzle some Hollandaise sauce over and serve.

This is such a great flavorful dinner that everyone will love it!.

Prep Time: 15 minutes
Cook Time: 20-25 minutes 
Serves: 2+

Steak With A Peach Blue Cheese Butter

Just another week and craving red meat with a kick. Was thinking something different than the standard marinated steak. Decided to take an easy garlic herb butter and kick it up a notch. Steak With A Peach Blue Cheese Butter.

 
Ingredients:

 
  • 1 lb flank steak
  • 3 tbs butter softened
  • 2 tbs blue cheese crumbles
  • 3 slices peaches diced
  • 1 clove garlic diced
  • Salt/pepper

 
1. Take softened butter and place in a bowl.

2. Mix in diced up garlic clove, blue cheese crumbles, and sliced peaches.

3. In a piece of tinfoil form the butter mixture into a log, wrap, and place in freezer for roughly 30 minutes. Remove about 20 minutes before cooking steak and place at room temperature.

4. Cook steak however you like it. I like a little herb rub and cooked only to rare/medium rare.

5. Take a couple slices of the butter and let melt over top of your steak.

 
This steak butter combo was great. The garlicky butter with addition of saltiness and distinct flavor from the blue cheese and the sweetness of the peaches all compliment each other perfectly.

Cook Time: Depends on preparedness
Inactive Time: 30 minutes
Serves: 2+

Philly Cheese Steak Sandwich

     If you have ever been to Philadelphia, you know there is no such thing better than a true Philly Style Cheese Steak Sandwich. You can get them about anywhere these days, however the original was created and can still be found in the great city of Philly. There is some argument between whether it should have mayo, provolone, or, manufactured Cheez Whiz topping. I chose what I think to be the best option and that is of the processed Cheez Whiz product. Please enjoy my version of the classic; Philly Cheese Steak Sandwich.
 
Ingredients:
 
  • 1 Ribeye steak cut into small slices
  • 1/2 white onion sliced
  • 1/2 cup diced mushrooms
  • Cheez Whiz spread
  • Mayo
  • Butter
  • Good hoagie buns
 
1. Slice the ribeye and sit aside.
 
2. In medium skillet over medium high heat melt some butter and saute sliced onions and diced
mushrooms until translucent and tender.
 
3. In same skillet brown sliced ribeye steak until nice and tender.
 
4. I took my hoagie buns and toasted them then spread the cheez whiz product and added mayo.
 
5. Top with the steak/mushroom/onion mixture.
 
This sandwich is a favorite of everyone. Simple, quick, and full of flavor.

Cook Time: 15-20 minutes

Steak Tacos

     I had bought a very cheap Flank Steak, one of my favorite cuts of meat.  Why, you may ask? Well because a flank steak, or skirt steak, is so versatile.  It is affordable and can be cooked anyway and used for so many different things.  The problem with this cut of beef is that you have to cut it properly or it will turn out tough.  So since I had this cut of beef in my freezer I decided to come up with a great Steak Taco.  I racked my brain trying to figure out a way to cook this steak in order to make it good for tacos.  I thought why not rub it with some traditional taco seasoning flavors and maybe even add some cocoa to give a different flavor.  So here goes: Steak Tacos

Ingredients:
  • Flank steak
  • 1.2 oz taco seasoning packet
  • 1tbs cocoa powder
  • 1 tsp chili powder
  • 1 avocado
  • 1 can diced tomatoes and chilies
  • Fresh corn tortillas
  • Mayo
  • Lime juice
  • Colby jack cheese

     Take the flank steak and rub it down on all sides with the taco seasoning, cocoa powder and chili powder.  Lay gentle on a hot grill or in the broiler.  Cook for about 15 minutes flipping halfway through.  (Cook the steak based on your preference. I like mine a bit rare).  Meanwhile in a skillet brown the corn tortillas in a little oil, fold, and sit aside on a paper towel.  In a small bowl mix in the mayo and lime juice.  Heat the tomatoes and chilies on the stove in a little saucepan. Slice the avocado. Once the steak is cooked to your liking. Slice at an angle in order to keep the flank steak tender. 

     Now take the mayo mixture and spread a bit on one tortilla. Lay down a slice or two of avocado, then some slices of steak. Top with a bit of the tomato mixture and sprinkle some cheese.  Enjoy the flavors as they combine into a nice hearty taco.  You would think that the spices from the steak and the heat from the chilies would be overpowering, however this dish was actually quite light and simple in its combination of flavors.
