White House Vegetable Tart

      Was a boring weekend and in typical style of Mr. Binns, I was doing nothing but watching the Foodnetwork to inspire myself with some new ideas. I came across the show Barefoot Contessa and decided to watch it as she was visiting the White House and cooking with the chef there. She was also having a luncheon with Mrs. Obama. Well I stopped to watch for two reasons; 1. To see if I could cook whatever the White House chef was making and 2. Because Mrs. Obama is pure class and if she can eat it, it must be good. So I sort of followed the chef's recipe for this delicious vegetable tart, however made it my own. The chef utilized homemade pie crust and did not add tomatoes. I decided to include the red fruit along with utilizing puff pastry instead of pie crust. So here goes; White House Vegetable Tart.


Ingredients:

  • 2 cloves garlic minced
  • 1 tsp thyme
  • 1 small onion diced
  • 8 ounces Swiss cheese
  • 1 zucchini sliced
  • 1 squash sliced
  • 3 Roma tomatoes sliced
  • 2 sheets puff pastry
  • Salt/pepper

Custard:
  • 2 eggs beaten
  • 1 cup half and half
  • Zest 1 lemon
  • 1/2 tsp thyme

1. Preheat oven to 375 degrees.

2. In a large skillet over medium heat saute onion in olive oil. Toss in the 1 tsp thyme and garlic and simmer until fragrant. Set aside to cool.

3. Lay the sliced zucchini, squash, and tomato on a tin foiled lined pan. Drizzle with some olive oil, salt and pepper. Bake in oven for roughly 5 minutes.

4. Meanwhile in a large bowl whisk together the eggs, half and half, lemon zest, 1/2 tsp thyme, salt and pepper. Set aside.

5. Layer the puff pastry end to end in a large baking sheet that has been greased.

6. Spread the onion mixture over top and sprinkle half the Swiss cheese on top.

7. Carefully arrange the vegetables according to the picture. One layer zucchini, followed by tomato, then squash, and so forth.

8. Pour over the egg custard mixture and sprinkle over the rest of the Swiss cheese.

9. Bake for 30 minutes until cooked through.


     This vegetable dish was fantastic. Fresh, crisp, and very light in it's flavor and texture. Definitely fit for anyone including the First Lady.


Prep Time: 20 minutes.
Cook Time: 30 minutes.
Serves: 5+

This is the perfect Summertime meal. Perfect for even vegetarians, (minus the meat). I made a fresh batch of homemade pesto sauce for sale and had some leftover. I was craving something other than pasta so came up with this great idea to grill some of the local produce I had come across and make a stack sort of veggie dish perfect for those hot summer evenings. I had just ran out to the store and picked up some great sliced prosciutto to add that little something extra to this dish. It was great. Quick, simple, and full of flavor. I felt healthier just eating it. Summertime Napoleon.

 

 

Ingredients:

  • 1 large eggplant
  • 1 large zucchini
  • I large tomato
  • Sliced Prosciutto
  • Sliced fresh mozzarella
  • Pesto
  • Olive oil
  • Salt/pepper

 

1. Slice the eggplant, zucchini, tomatoes, and mozzarella. Drizzle and rub some olive oil over the sliced eggplant and zucchini.

 

2. Over a hot grill pan, or grill itself, grill the eggplant and zucchini in batches until grill marks appear on each side and the meat is tender.


 
3. Now for the easy part. Layer a slice of eggplant, then prosciutto, mozzarella, zucchini, then tomato. Continue until you have a nicely layered stack or fanned out veggie plate. Salt and pepper to taste. Drizzle some pesto and viola!

 
This dish with very little meat in it will easily become one of your favorite meals of the summer. So full of flavor and just that perfect fill up when you don't feel like really cooking.

Cook Time: 15 minutes

     I am not going to bore you with a story regarding this dish. It was just something I came up with at the last minute to utilize some left over cut zucchini, squash, eggplant, and peppers. I was craving something creamy and delicious with chicken.  Creamy Rosemary Chicken.

Ingredients:
 
  • 1-2 boneless chicken breasts
  • Sliced eggplant
  • Sliced zucchini
  • Sliced squash
  • Sliced peppers
  • 1 clove garlic
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • 1 sprig rosemary or 1 tsp dried rosemary
  • Olive oil
  • Salt/pepper
 
1. In a large saute pan drizzle some olive oil.
 
2. Salt and pepper your chicken and brown on both sides. Remove
 
3. In same skillet saute the eggplant, zucchini, squash, and peppers.
 
4. Add in diced garlic and white wine. Simmer until the wine has begun to half.
 
5. Place chicken back in. Pour in heavy cream and rosemary.
 
6. Bring to simmer over low heat. Cover and simmer for about 15-20 minutes stirring occasionaly.
 
7. Salt and pepper to taste and serve over rice or pasta.
 
     This was an amazing and delicious dish. Easily made one weeknight and definitely has become a favorite. Enjoy!

     What is ratatouille? Have you seen that cartoon movie with the little rat? Well, they end up making this famous traditional French stewed vegetable side dish. Beautifully presented as layers and packed full of flavor, this dish is so easy and delicious that you will make it as much as possible. Especially if you have a garden full of fresh vegetables, this dish is easy to make and will feed a lot of your family. I was surprised how quick and easy this dish was. I was also surprised it turned out so pretty too. Ratatouille.
 
Ingredients:
  • 2 small zucchini
  • 2 small yellow squash
  • 2 orange bell peppers
  • 1 small eggplant
  • 2-3 small tomatoes
  • 1/2 12 oz can tomato sauce
  • Garlic
  • Onion powder
  • Olive oil
  • Herb de Provence
  • Goat cheese

 

1.       Slice all vegetables into ½ inch thick slices. Slice pepper into ½ slice rings. You can even cut them in half if they do not fit the same size.

2.       Take half can of tomato sauce and pour into 9x13 pan.

3.       Sprinkle some garlic and onion powder

4.       Begin layering each vegetable in a sequence until all has been used up or no more room. (See picture)

5.       Drizzle with some olive oil and sprinkle some Herb de Provence.

6.       Cover with parchment paper or tinfoil.
 
7.       Bake covered for 45 minutes in 375 degree oven.

8.       Sprinkle with some fresh goat cheese and serve.

     That is it! Simple delicious and full of flavor. A simple French dish that anyone can make and will not be intimidating to do.

     The sun has begun to set over the Mediterranean Sea. It is slowly sinking under the cover that is the blue green ocean of a blanket. The sky is a beautiful collage of reds and oranges. You are perched just comfortably at a little table overlooking the scene on a little white balcony. You can hear the sound of the waves gently hitting the rocks and cliffs below. A few boats are still out in the bay drifting by and you can faintly hear them buzzing. A soft accordion music is playing from inside the cobble stoned restaurant. There  is a sweet smell of fresh flowers and lemons in the air. No it is not coming from an arrangement on your table but rather the natural smell of the tiny village you have decided to claim. A lemon tree sits beside your table along with the fresh flowers growing on the side of the cliff that tickle your nose. The air is warm and a bit humid but with the breeze coming in off the water it is fresh and calming. You take a small sip from the wine glass that has been given to you by the lovely dark haired waitress that greeted you. What could be  more perfect? And then it happens…. The lovely dark haired lady is returning to your table and bringing you a small plate with what looks like some fried little sticks. She lays them in front of you and gently says, “Boun Appetito”. You respond with a nervous, “Grazie” as she saunters away smiling. You take a bite and the most wonderful thing happens. Your mouth is met with a fantastic combination of the cheese and herbs stuffed inside and the crispiness from the coating. You savor the taste of this simple appetizer  that you cannot wait to eat more of it. You sit back, smile, and know that you are in heaven.

     Stuffed Zucchini Flowers; this is what I think of  when I eat, Stuffed Zucchini Flowers. I had them on one of my trips to Italy. Specifically the Amalfi coast which is the description above. Now as it turns out, my mother and grandmother used to make this a lot, but low and behold they never did for me and my siblings. (A nice little piece of information I would have liked to have known as  a child). My mother says that grandma just stopped making them and she did too. Just one of the things I guess they decided to not continue down the tradition line. Oh well, I digress. Either way, they are now being brought back to the family. Stuffed Zucchini Flowers

Ingredients:

  • 24 zucchini flowers
  • 1/2 block of cream cheese
  • 8 oz ricotta cheese
  • 1 tbs Italian herb seasoning, (I just used a combo bottle of basil, oregano, garlic, parsley, etc)
  • lemon juice
  • salt/pepper
  • 1 cup flower
  • 1 cup water

1. Rinse and remove the outer green around the base of the flowers and remove the inner stamen. (Be care not to break through the blossoms.


 
2. Paper dry the blossoms until all the water is gone

3. Combine the softened cream cheese, ricotta, and herb mixture together. Taste and add salt and pepper for your flavor and a little lemon juice.

4. Now carefully stuff a bit of the mixture into each blossom. You can use a pastry bag so as to make it easier.



5. Combine the flour and water mixture and add a little salt. Carefully take each zucchini blossom and twist the ends of the petals together to seal the inside mixture and dredge each one in the flour water mixture. Let excess drain off.

6. Now in a deep fryer or in a skillet with about 2 inches of oil heated over medium high heat drop a blossom into the oil one at a time. Careful not to overcrowd the oil. I usually only fry about 3 at a time.


7. Fry for a couple minutes on each side until golden brown. Remove and let drain on a paper towel lined plate.
      That's it. Simple, delicious, flavorful, and so easy to make. These brought me back to my time on the Amalfi coast. A fantastic little appetizer that everyone will love. Hope you enjoy!

      Ever have those evening where you just have no idea what to make? You open your fridge and freezer and just stand there…….Thinking about what you could possibly put together that would help your craving. Do I want chicken? No! Do I want burger? No! Do I want something simple like cereal or and boxed meal? No! No! And no!. Then you see some Italian sausage. You think I could sauté them add some fresh garden vegetables and make a simple skillet simmer. Exatcly!! And you have a completely new and exciting dinner meal that you can add to your recipe box.  Summer Sausage Simmer.

 
Ingredients:
  • 4 Italian sausages
  • Garlic
  • 1 Zucchini
  • 1 squash
  • Small bulb of fennel
  • Handful of small yellow potatoes
  • ½ cup chicken stock
  • ½ cup white wine
  • Olive oil
  • Salt/pepper
 
1.       Dice the sausage into bite size pieces. Sauté in a skillet in a little olive oil over medium high heat until browned.
2.       Remove and set aside. In same skillet sauté diced zucchini, squash, diced fennel bulb, and bite size potatoes.
3.       Pour in the chicken stock and white wine.
4.       Add back in the sausage and salt and pepper.
5.       Cover and simmer for about 20-25 minutes on low until all ingredients are cooked through
 
     This little simmer pot was fantastic. I served with a spinach salad on the side. Fulfilling and delicious.

Uncle Johnny's Legendary Zucchini Parmesan

     This past January my family lost another beloved member my Uncle Johnny. He was an amazing man. Kind hearted, sweet, friendly, and willing to help anyone. He was a gardener, a woodworker, and a fantastic cook. A man that had such an infectious laugh that as soon as you met him you felt at home. He was also the inspiration for my Children’s Book; Paul And The Porch Gnome, which is also on this blog. One of my favorite dishes of his was his Zucchini Parmesan. It is a simple dish so quick and easy to make and full of flavor. My mother, his sister, never made this for us because Uncle Johnny’s was so good and he only lived next door that when he did make it he would always bring some over for us.  A fantastic Italian cook he was that this dish is just the tip of the iceberg to what he could do. Please enjoy this fantastic simple recipe that means more than the ingredients that make it up.  Zucchini Parmesan.
 
Ingredients:
  • 3 medium zucchini cut into 1/3 inch slices
  • Mozzarella cheese
  • Parmesan cheese
  • Marinara
  • Preheat Oven 350
 
1.       After slicing your zucchini into 1/3 inch slices place a bit of marinara of your choice into a 9 x 9 pan.
 
 
2.       Lay down a layer of sliced zucchini.
 
3.       Top with some shredded mozzarella and parmesan.
 
4.       Drizzle some marinara over and begin layering in the same order as above
 
5.       One you reach the top sprinkle more mozzarella and parmesan.
 
6.       Cover with tinfoil and bake in oven for 60 minutes.
    
      As I eat this I will always think you of Uncle Johnny. Summers spending time next door, helping plant, working in the basement, and cooking. Miss you every day.

     I came up with this dish while thinking of a great way to combine a wonderful set of ingredients that you will typically find in my family. Everyone within my family always combines the great tastes of sausage, peppers, onions, zucchini squash, and tomatoes. We love this combination. There is just something tasty about them. Whether it is in a sandwich or in a sauce, the flavors just complement each other and create a fantastic dish that everyone loves.

    
     I’m a sucker when it comes to a creamy pasta dish. Anything that combines a thick delicious sauce with homemade pasta is a win-win in my book. So I decided to combine some of the above ingredients and make a fantastic pasta dish that I could call my own.
    
     The pasta in this dish is just something I decided to throw in. Most people do not know what Multitagliati are. It is just simple left over cuts from homemade pasta. Typically when trying to cut pasta all into a uniform shape you will be left over with some odd cuts that just don’t go well into the dish or look pretty. You can typically use them in soups and stews where structure and beauty do not matter.  I decided just to make nothing but these odd shape pasta sizes that would hold up well to the chunks of sausage, peppers, and zucchini within the thick sauce. Hope you enjoy my Sausage Garden Multitagliati.

 
Ingredients:
  • 1 lb ground Italian sausage
  • ½ diced orange bell pepper
  • ½ white onion
  • ¼ cup diced mushrooms
  • ½ cup diced zucchini squash
  • 1 clove diced garlic
  • ¼ cup diced tomatoes
  • 1/3 cup Pecorino Romano cheese
  • 1 cup heavy cream
  • Handful diced basil
  • Pinch of thyme
  • ¼ cup white wine
 

1.       In a large sauté pan drizzle about a tbs of olive oil and brown your sausage. Remove

2.       In same pan sauté your diced pepper, onion, mushrooms, tomato, zucchini, and garlic until the vegetables have softened and are fragrant.

3.       Pour in the white wine and reduce.

4.       Toss back in your sausage and cream and stir to combine.

5.       Stir in the basil and thyme. Salt and pepper to taste.

6.       Stir in the cheese and serve over your favorite cut of pasta.

    
     After the first bite of this dish it quickly became one of my all time favorite combinations. I made just enough to have some of my family members taste it and they loved the combination. They began making it just as quickly.

Prep Time: 15 minutes
Cook Time: 20-30 minutes
Serves: 4-5 people.

     It is Mediterranean month on my foodies+ community on Google+. I decided to invent my own dish based on some amazing ingredients you can find in the Mediterranean. Lemons are so popular in the southern part of Italy as well as in Greece. They use lemons for almost anything. Rosemary and fresh garden vegetables are also a big part of the cuisine. I included some white wine because wine is found in almost every meal. This dish was great. I was so proud that I put this together on a whim. I was sitting at work trying to figure out what to make for dinner on the weekend but knew my schedule might change due to my other job. I hurried to the store on a Thursday evening and prepped all the vegetables that night so as to put it all together early Friday morning for a wonderful start to my weekend. Hope you enjoy this Lemon Rosemary Chicken.

 
Ingredients:
  • 3 chicken breasts
  • Zucchini
  • 2 small yellow squash
  • 1/2 green pepper
  • 1/2 white onion
  • Cup white wine
  • Cup chicken stock
  • 1 lemon
  • Sprig fresh rosemary
  • Salt/pepper
 
     This is so easy and amazing I couldn't believe how good it was. Simply take your zucchini and squash and slice them. Take the onion and pepper and slice them into strips. Place half the vegetables in the bottom of a Dutch oven. Salt and pepper your chicken breasts and place them on top. Lay the sprig of rosemary along side the chicken. Slice the lemon into roughly about 4 slices and lay them on top of the chicken breasts. Take the rest of the vegetables and lay them on top of that. Pour the white wine and chicken stock into the pot. Cover and place in a 200-degree oven and let cook for roughly 3 1/2 - 4 hours. That simple. Once you remove the lid the aroma that fills the air is amazing. I placed mine in the oven before I went to work and when I came home for lunch it was finished. This dish is so fresh tasting, crisp from the lemons and full of flavors from the vegetables and rosemary. This recipe serves about 3-4 people. I love it and so will you.

     It's winter here in the wonderful mountains of WV.  By this I mean it is freaking cold.  Probably one of the worst places for winter on the east coast.  What better dish than a nice bowl of soup.  How about a bowl of vegetable beef soup?  The variety of vegetables cooked down in a warm beef broth accompanied by some chunks of tender beef.  My version of a vegetable beef soup is simple.  No clue why I chose the ingredients that I did, they just work well together. Serve it up with some nice fresh baked rolls and you have yourself a wonderful cold winter night’s meal. Here goes: Vegetable Beef Soup


Ingredients:
  • 1 lb stew beef
  • 2 boxes beef stock
  • 1-cup potatoes
  • 1-cup carrots
  • 1/2 10oz can corn
  • 1/2 10oz can green beans
  • 1 small zucchini
  • 1 10oz can diced tomatoes
  • 1/2 white onion
  • 1 tsp rosemary
  • 1 tsp savory
  • Ditallini

     In a large Dutch oven or stockpot brown beef in a bit of olive oil.  Toss in onion and carrot and simmer until the onion has become a bit translucent.  Pour in the stock and toss in the potatoes, corn, green beans, zucchini, diced tomatoes, and the herbs.  Stir and bring to a boil.  Lower temperature and simmer for about an hour to an hour and a half.  15 minutes before ready to serve toss in the ditallini and simmer until pasta has cooked.  Serve with a nice roll or piece of bread.      On another Asian kick and thought about going back to Chinese.  My friends at foodies+ are to blame right now for my obsession, lol. I decided to go back to a traditional takeout item; Lo Mein.  I thought; why not do pork lo mein with some traditional flavors you would hope to find in a good takeout lo mein.  I thought about what makes a good lo mein.  The noodles, the vegetables; like cabbage, mushrooms, and a good sauce. So here goes, my version of Pork Lo Mein

 

Ingredients:

  • 1/2 lb pork tenderloin
  • 1 package lo mein noodles
  • 1/4 white onion cut into strips
  • 1 tsp of minced ginger
  • 1 small zucchini cut into strips
  • 1/4 cup stripped cut cabbage
  • 1/2 cup shiitake mushrooms
  • 1/2 tbs sugar
  • 1 tbs starch
  • 5 tbs soy
  • 3 tbs oyster
  • 2 tbs sesame oil
  • 1 tbs rice vinegar

     First cut up your pork tenderloin into thin strips.  Mix in a tbs of starch and 1/2 tbs of sugar.  Marinate with 1 tbs of soy for about half an hour. Meanwhile cook the lo mein noodles as directed and drain.  In a large wok over medium heat toss in the pork and cook until done.  Toss in the ginger, zucchini, cabbage, and mushrooms and sauté until cooked through.  Pour in 4 tbs of soy, 3 tbs of oyster, 2 tbs of sesame oil, and 1 tbs of rice wine vinegar.  Pour over the lo mein noodles, incorporate, and serve immediately.  Serves 2-4 in about an hour.
